a refined restaurant where the tuna fish is the king of the

The
Restaurant is set at about 300 mt. from the centre of the
village, along the salt-pan canal with a wonderful view on
the ponds populated with beautiful pink flamingoes.
Who is fond of the fish based cuisine cannot miss a visit
to 'Dau Bobba': the chef Giorgio Parenti knows all the secrets
to transform a mediterranean tuna-based dinner in a special
event.
Typical dishes drawn on cuisine from Carloforte proposing,
at the same time, unusual modifications and combinations.
This choice arises from the dutiful respect of the traditions
and a careful and well-balanced evolution accordingly.

The
Restaurant |
The
environment, obtained from an ancient tunny factory,
preserves the original stone construction, offers
a suggestive terrace and a wide open patio.
"Bobba" was the nickname of the old fisherman
who managed the ancient tunny factory. The layout
of the envirnments make it possible to accomodate
100 places, of which 50 in the inner smokers and no-smokers
halls and 50 in the outside patio. |

The Cuisine |

Chef
Giorgio Parenti, Genoese, actor son of an actor father,
with experiences and stages in different italian regions,
creator of the culinary services, and his companion
Maria Ida Ferraro in the hall, offer a nearly daily
menu, privileging products from the local sounding-depth,
rich in esteemed fish and very tasty crustaceans. |
And
when in May the sacral local tunny-fishing grounds explode,
a true kaleidoscope of tastes breaks into the day-menu
and frees all the chef talent.
For his delicacy, the red tunny 'tunnis tunnis', isle's
primary culinary resource, is considered the best of
the world. At Dau Bobba restaurant it is served also
raw, in various arrangements, together with oriental
tasty sauces. They are the memories' tastes, searching
never fogotten roots, recent and remote, proposing a
cuisine in the dutiful respect of the traditions and
at the same time both a careful and well-balanced evolution.
The cellar offers 60 kinds of wines, privileging Sardinians
labels, but offering also selected regional and international
wines.
Moreover, at Dau Bobba restaurant you will find very
good, genuine ovine and goatish cheese coming from Sardinia,
above all from Barbagia and ogliastra area. |

The
Dishes (From the tabarkian tradition to the last generations
recipes) |
Between
the traditional dishes we recommend the vegetarian cus
cus or cascą, ancient memory of the Carloforte people
staying in the Tabarka isle in Tunisia, the saucepan
with poor fishes (cassolla di pesci poveri) and the
Carlofortino tuna.
Moreover we propose the dory in almonds crust, basses
with pine-seeds and asparagus tips, angler fish with
mushroom and potatoes, grilled sword fish with 'pecorino'
flakes, sea crayfish having an unique and unforgettable
taste, proposed in inedited and suggestive combinations. |
